While traditionally regarded as a festive winter soup, when eaten for breakfast, this Persian soup is a hearty way to start a day. Kale Pacheh is prepared mainly by cooking the head, hand, and foot of sheep, and other parts of this animal-like tongue, brain, eyes, meat, face, and hooves; the cooking process takes time. Kaleh Pacheh is a traditional dish that is popular in the Middle East and the South Caucasus, and the Iranian people have a long history of food. According to a recently discovered document and newspaper headline in North Khorasan province in Iran, a 4,000-year-old Kaleh Pacheh has been discovered !! Kaleh pacheh loyalists tout the flavor as being extremely savory and, depending on the recipe, herbaceous. Some claim that the sheep brain can taste bland, but many choose to add lime with salt to Kaleh is a Farsi word for head, which here refers to the sheep’s head and Pacheh is the Persian term for sheep’s trotters.
